
Easy Microwave Peanut Brittle
Sweeten up your holidays with this quick, low-energy use treat. Mix up a batch for the office or as an easy, homemade gift.
1 cup sugar
½ cup white corn syrup1
cup roasted, salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda
In a 1 ½ quart casserole stir together sugar and corn syrup and microwave on high for 4 minutes. Stir in peanuts and microwave for an additional 3-5 minutes on high.Add butter and vanilla to mixture, blending well. Microwave on high for 1-2 minutes.
Peanuts will be lightly brown and the syrup will be very hot. Add baking soda and gently stir until light and foamy.Pour mixture onto lightly greased cookie sheet. Let cool for ½ -1 hour.
When cool break into pieces and store in an air-tight container.For Pecan Brittle, substitute 1 cup pecan halves for the peanuts.
