Baked Pork Chops with Yams & Apples

This is one my favorite Holiday meals to cook and it is so yummy! It is from my "Old Fashioned Holiday Recipes" cookbook by Debbie Mumm. I got it a couple of years ago from Laren's Schoolastic Book Fair of all places! I want to share several of the recipes from this book.

Prep Time: 25 minutes
Total Time: 1 1/4 hours

1/2 cup maple syrup
1 teaspoon minced garlic or 1 small clove garlic, peeled and minced
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cinnamon
1 cup chicken stock or broth
3 tablespoons vegetable or canola oil
2 Granny Smith apples, quartered, cored, and cut into 1-inch slices
Parsley for garnish (optional)

1. Heat oven to 375 F. Combine maple syrup, garlic, ginger, salt, pepper, cinnamon and stock in small bowl. Mix well. Line roasting pan with heavy-duty aluminum foil.

2. Heat oil in large skillet on med. high heat. Brown pork chops on both sides. Remove from pan.

3. Place chops in roasting pan. Add yams and apples. Pour syrup mixture over all. Bake uncovered at 375 F for 15 minutes. Remove pan from oven. Turn chops, yams and apples gently with spatula. Return to oven. Bake 10 minutes or until apples and yams are soft and pork is no longer pink in center. Serve immediately.

Makes 4 servings

Note: this dish can be prepared and baked up to one day in advance and refridgerated, tightly covered. Reheat the dish, covered, at 350 F for 15 mins. or until hot.
